Guest Post: Gluten Free Low Sugar Banana Blueberry Muffins

If you follow us on Instagram, you know that we are headed back to Hawaii for the last few days of our vacation! In the meantime, we’re excited to bring you an awesome hike-friendly recipe! EZ often bakes up treats for our long hike days, and we are on the lookout for easy, low sugar, and healthy recipes. We came across Matt and Nat who blog over at Paleo Power Couple. They post great recipes and ideas for people looking to eat healthy through focusing on fruit, vegetable, and meat-based meals. There are also several sweet treats sprinkled in! Here is their “healthy not boring” recipe for gluten-free low sugar banana blueberry muffins:

Healthy not boring

For most people, eating healthy means plain and boring! But we believe that you absolutely can create delicious healthy and nutritious food, without the added sugar or gluten. It just means you need to get creative in the kitchen and find healthier ingredients.

To show you how, we’ve created these delicious banana and blueberry muffins that are low sugar and grain free! “How can muffins possibly be healthy?!” We hear you ask…. Well, the key is the combination of healthy fats and protein along with natural sweeteners.

The perfect energy mix

The healthy fats and protein come from the almond butter and eggs, leaving you feeling fuller sooner than if you were eating a muffin that was mainly flour and sugar. The blueberries and bananas provide the sweetness, but also lots of fibre, potassium and anti-oxidants! Which also fills you up! How good is that when you need an energy boost for the return leg of your hike or bike ride?!

Quick and easy

Plus these muffins are super quick and easy to make. Just whiz the ingredients up in a blender, pour into a muffin tray and bake! It’s really that simple. They are also extremely versatile, so you can have them for breakfast, as a yummy snack during your outdoor adventures or for any other family outing where you know you need to bring your own food. It really is the perfect grab and go snack!

Gluten Free Low Sugar Banana Blueberry Muffins

What you need

2 Medium Ripe Bananas
1 Cup Blueberries
2 Eggs
1/2 Cup Almond Butter
1/4 Cup Coconut Milk
1 tbs Sweetener (we use honey)
1 tsp 100% Vanilla Extract
1 tsp Baking Powder (Gluten Free and no nasties!)

How To Make Your Gluten Free Low Sugar Banana Blueberry Muffins

    1. Preheat oven to 180 degrees
    2. Line a muffin tin with muffin cases (or a silicone muffin moulds for a more sustainable option!)
    3. Place all of the ingredients (EXCEPT THE BLUEBERRIES) into a blender
    4. Whiz it up until nice and smooth
    5. At this stage, we give you permission to taste test the batter. If you have a sweet tooth, you can add an extra tablespoon of honey
    6. Grab the blueberries, and gently stir them into the batter
    7. Use a spoon to fill the muffin cases with the batter. You may lick the spoon again, because that batter is just so YUM
    8. Place the muffin tray into the oven and bake for 20 minutes or until golden brown
    9. Allow to cool before enjoying these delicious muffins
    10. Store in the fridge for up to 4 days (if they last that long). They do taste delicious warm, but they taste even better when served cold after being in the fridge overnight.
